The Ultimate Kansas City-style Barbecue Sauce!

There are two types of barbecue sauce recipes that you should have, Texas-style and Kansas City-style.  This is a tomato based barbecue sauce recipe, and it should satisfy the Kansas City-style sauce lovers out there.  It is smoky and sweet with some bite to it.

Total serving size: 6 cups of sauce (for a larger yield, adjust the level of ingredients proportionally)

Ingredients

  • 2 cups tomato sauce
  • 1 1/4 cups of brown sugar
  • 1 1/4 cups of red wine vinegar
  • 2 cups ketchup
  • 1/2 cup of molasses
  • 2 tbsp (tablespoons) of butter
  • 1/4 tsp (teaspoon) of chili powder
  • 1/2 tsp (teaspoon) of garlic powder
  • 1/2 tsp (teaspoon) of onion powder
  • 4 tsp (teaspoons) of liquid smoke ( hickory flavored)
  • 1 tsp (teaspoon) of paprika
  • 1/4 teaspoon of cinnamon (ground)
  • 1/2 teaspoon of cayenne pepper
  • 1 teaspoon of black pepper (ground)
  • 1 teaspoon of salt

Cooking Instructions:

Step One:
Heat up your stove on Medium heat and using a large saucepan, mix together the ingredients above (tomato sauce, wine vinegar, the ketchup, molasses, butter, and liquid smoke.  The order in which you mix them doesn’t matter since they are all going to be blended together anyway.  Next you want to add the seasonings into the saucepan (chili powder, onion powder, garlic powder, cinnamon, paprika, salt and pepper, and cayenne pepper.

Note on Cooking for Kids: The cayenne pepper and chili powder might be to hot for children to handle in this barbecue sauce recipe.  If you are cooking for kids as well as adults, then only add a pinch of the chili and cayenne.

Step Two:
Once all the ingredients are in the saucepan, reduce the heat down to low and allow the mixture to simmer for about 20 minutes.  If you want the sauce to be thicker, then simmer for longer at least 20 minutes, but preferably a little bit longer.  If you want the sauce to be thinner then simmer for less than 20 minutes.  One could also add a little bit of water to the mixture in order to thin it out a bit.

Step Three:
When you achieve the sauce thickness that you desire, remove from the heat and let it sit.  Brush the barbecue sauce onto your meat within the last 10 minutes of barbecuing.

The Deliciously Moist Banana Cake Recipe

Ingredients

  • 3 eggs
  • 1 1/2 cups of mashed up bananas
  • 3 cups of flour
  • 3 1/2 cups of confectioners sugar
  • 1 1/2 cups of buttermilk
  • 2 teaspoons of vanilla extract
  • 2 teaspoons of lemon juice
  • 3/4 cup of butter
  • 1 1/2 teaspoons of baking soda
  • 2 1/8 cups of white sugar
  • 1 (8 ounce) package of cream cheese, softened
  • 1/2 cup of butter, softened (separate serving of butter)
  • 1/4 teaspoon of salt
  • 1 teaspoon vanilla extract (separate serving of vanilla)

 

 

Instructions

 

Step One:

Begin by preheating the oven to 275 degrees. Then grease up and sprinkle flour into a 9 x 13 inch baking pan.

Note: 275 degrees is correct. The lower temperatures and slower baking rate will keep the cake moist.

Using a small sized mixing bowl, mix together the lemon juice and the mashed bananas. Then use a different mixing bowl of medium size, and mix the baking soda, salt, and flour. Set aside both bowls.

Step Two:

Using a large bowl, put the 2 1/8 cups of sugar and 3/4 cup butter in the bowl and cream together with a hand blender until the contents become fluffy. Take the eggs and beat them one by one, and then stir in 2 tsp (teaspoons) of vanilla. Next beat in the flour mixture alternately with the buttermilk. Then stir in the banana mixture, and finally pour the batter you made into a prepared pan.

Step Three:

Now it’s time to bake the cake. Put it in the preheated oven and bake for 1 hour, or until you can insert a toothpick into the center of the cake and it comes out clean. Remove the cake from the oven and immediately place it into the freezer for 45 minutes.

Note: The key to this banana cake recipe is to keep the cake nice and moist. This is why we bake at a slower rate and cool the cake in the freezer.

Step Four:

Now we move on to the best part for some people. The frosting! For the frosting, use a large bowl and cream together the cream cheese and the 1/2 cup butter until the mixture is smooth, then it’s time to add the 1 teaspoon vanilla and sugar. Beat the frosting on low speed until all the ingredients are combined, then switch to high speed and beat until the frosting is smooth. Finally it’s time to spread the frosting on the cake.

Spring Biscotti Recipe

  • 2 eggs
  • 1 egg white
  • 2 cups of flour
  • 1/2 tsp (teaspoon) of vanilla extract
  • 3/4 cup of white sugar
  • 1/4 cup of butter
  • 1/4 tsp (teaspoon) of lemon extract
  • 3 ounces of chopped white chocolate
  • 1/2 cup of dried cranberries
  • 1 1/2 tsp (teaspoons) of baking powder
  • 1 1/4 cups of pistachio nuts
  • 1/4 tsp (teaspoon) of salt

 

Instructions

 

Step One:

Using a large bowl, place the sugar, lemon extract, vanilla extract, and butter in an electric mixer and mix until the cream is light and fluffy.  Then you want to mix in the eggs and egg white one at a time, beating well after each addition.

 

Step Two:

Combine together the baking powder, flour, and salt.  Then slowly blend that mixture  into the creamed mixture with a wooden cooking spoon.

 

Step Three:

Almost done with the prep work.  Now you want to take the dried cranberries, pistachios, and white chocolate and stir them all together into the creamy mix. Finally cover and chill in the refrigerator for about 30 minutes, or until your dough is no longer sticky.

 

Step Four:

Preheat the oven to 325 degrees and Line your baking sheet with some parchment paper.

On a lightly floured surface place the dough and divide it into half sections. Mold each half into a flat log approximately 12 inches long by 3 inches wide. Next you want to space the logs about 3 inches apart on the sheet.

Tip: If you want a larger number of smaller cookies, then bake them in 3 two-inch logs, rather than 2 three-inch logs.

 

Step Five:

Put the dough in the oven and bake for 30 minutes, or until light golden color. Allow the logs to cool on your baking sheet until they cool enough to touch. Using a clean cutting board, cut logs diagonally in 1 inch thick slices. Place cut logs back on to the baking sheet.

 

Step Six:

Again bake the biscotti for another 15 minutes, or until golden. Let the biscotti cool.

Tip: If you want to save your cookies for later, then store the biscotti in an airtight container at room temperature.

There you have it!  One deliciously yummy Spring Biscotti Recipe.  This is a base recipe and can easily be modified with other ingredients for a different flavorful experience.

One alternative idea is to replace the lemon-extract with 2 tablespoons of orange zest and then replace the pistachios with almonds.  You now have an almond biscotti recipe which will give an amazingly zesty and distinctly different flavor with just those few changes.  Experiment, have fun, and enjoy!

Simple BBQ Chicken Recipe With Homemade Sauce

 

There are quick and easy ways to cook barbecue chicken with store-bought sauce, but this recipe includes the ingredients make your own BBQ sauce.
Lets get started!

 

For the Brine:

  • 6 chicken legs and thighs, (leave the skin on, and the bones attached)
  • 1/4 cup brown sugar
  • 2 quarts water
  • 2 tablespoons of iodized salt
  • 2 garlic cloves, (smashed)
  • 4 sprigs of thyme

The Barbecue Sauce:

  • 1/2 cup brown sugar (packed)
  • 1/2 cup vinegar, (wine or cider vinegar)
  • 2 tablespoons prepared mustard
  • 1 cup ketchup
  • 1 teaspoon garlic powder, or more
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon ground ginger
  • 1 tablespoon vegetable oil

Directions:

Step 1:

First we will combine the brine with the chicken so that the chicken can absorb the extra flavors as well as keep the chicken moist after cooking.

To make the brine you will want to mix all of the brine ingredients into a mixing bowl (water, salt, garlic, thyme, and sugar).  Mix well and then put the brine into a large size re-sealable plastic bag.  Add the chicken into the bag and then refrigerate the brine for 1-2 hours.  If time is an issue you can remove it after 30 minutes, so long as the ingredients get absorbed by the chicken.

Step 2:

Now we move on to making the barbecue sauce.  Mix all of the sauce ingredients into a large or medium sized pan and warm up the sauce over medium-low heat for about 5 minutes or until simmering.  You don’t want to heat it up too much or you will burn the sauce.

Note:  For a more spicy flavor, add Tabasco sauce, red pepper flakes, or cayenne pepper.

Once the sauce is finished set aside about 1-2 cups of sauce for serving at the dinner table, the rest will be used to coat the chicken.

Step 3:

Fire up the grill and preheat on medium (or 375 degrees).  Remove the chicken from the brine and lightly pat it dry with some paper towels.  Now it’s time to get cooking!  Toss the chicken pieces on to the fire and coat the chicken well with your barbecue sauce.  You want to coat both sides of the chicken and grill each side for about 10-15 minutes.

Alternate method:

Grill both sides of the chicken for 5 minutes each (10 total) without adding the bbq sauce.  Then transfer the chicken to a cookie sheet and stick it in a preheated oven (375 degrees).  Bake for 15 minutes then brush the bbq sauce on the chicken.  Cook for another 10 minutes then add a second coat of sauce.  And finally cook for another 10 minutes.  This takes longer but adds a richer flavor to the chicken.

When done serve with your favorite side dishes and the extra sauce.  Enjoy!
